The BMP can be very ruthless, and their ruthlessness can even go towards their own subordinates. Katakuri killed three chef subordinates, Daifuku attacked his own fleet and killed some of his subordinates when trying to kill Carrot, Flampe stabbed one of her subordinates with a fork, and in the anime we see Smoothie kill a few of her subordinates in order to get larger.

As durable and endurant as the plot wants him to be, that's in great part why the fights against Katakuri were so frustrating since Luffy was basically a living punching ball for nearly all the fight, only staying alive and able to fight due to plot armor.
So it's really satisfying when he's really knocked out.

Exactly ~

Katakuri would have won that fight had he not been the MC. For all we know he could have died much earlier regardless ~ like in Marineford after Akainu had hit him or even in Impel Down or Enies Lobby or Loguetown

Had Luffy not been the MC he would surely have died at least as soon as Alabasta after Crocodile pierced him or after he drained him of his water.
