He wasn't inconsistent. He knew his limits and that Zoro in KoH was going to break through his defense. And Zoro even taunts him about it asking why he was worried and blocking.

There's a reason Zoro or Luffy haven't been using ACoC on Seraphim.

Zoro won not because he was strong but because King was an idiot, not sure who's hyped by this, the dude is litterally invincible and just decided to give it up. The fight doesn't make any sense, Oda really fucked up on this point.

King lost because Zoro's ACoC was strong enough for him to start dodging/blocking even in flame mode and he couldn't defeat him without using speed mode. The fight makes sense, I don't get why people find the fight confusing.
