Sukuna didn't use Open on Gojo for the same reason why he did not use his CT on him without his domain. They don't work on him altogether. The only ways Sukuna could get past Infinity are Maho, DA, and DE.

1. We don't know if Maho can hit Gojo as of now.
2. He gets outclassed by Gojo in CQC while using Domain Amplification as he can't use his own CT.
3. Domain Expansion can't do anything if Gojo has his own domain up as their sure hits cancel each other, so they go back to point 2.

Sukuna had the opportunity to use it during the first domain clash when Gojo was domainless inside Sukuna's domain. He doesn't have that chance anymore now that Gojo can get back his CT almost immediately after losing his domain.
