Yes I noticed. It was one particular moment to portrait his attack since it is called King Cobra. Is not the whole attack itself. They portraited as a Cobra and then went back to normal fighting. I see no problem with that.
And the comparison you make is way clear how different they are. The whole scene is flashy instead of a single moment.

Like, that Kong Gattling clip is mostly "normal fighting" as you put it. It just has some effects and impact frames. Its a technically more impressive scene than the King Kobra, but it is literally exactly the same sort of style.
You really can't understand since you are comparing one small moment from before Wano to whole episodes filled with flashys everywhere at Wano.

Luffy was unconscious fallen on his back with blank eyes. Katakuri felt on his chest just tired with his eyes closed.
Having your eyes closed like that also indicates your unconscious. There is more than one single way to indicate unconsciousness.
Like I said he was just resting. He got up first. He was never out.
Again, having your eyes closed like that is just of suggestive as unconsciousness as having them whited out.

Luffy was incapable of fighting any further this is fact. But he had to be there by 1 am sharp otherwise the plan and his crew were finished.
Luffy couldn't fight seriously any further, but Luffy could still move, and when push came to shove, he was still capable of moving at soru like speeds to save himself from getting stabbed. Thats a significantly better position than Katakuri was in.
Katakuri had no reason left to continue struggling, both had NO energy left to fight. Kat gave it his all (after throwing the fight) and heck he was on Luffy's side at that point.
Yeah, Katakuri did sort of throw the fight by evening the odds(after he felt he'd been given an advantage he viewed as unfair), but I'd say that Luffy was still in better shape than Katakuri. Katakuri standing up and walking over to Luffy was all he could manage to do before his body gave out. Luffy was still able to move if and when he wanted to.
Kat made sure to see Luffy was knocked out, before passing out himself. Then he was also first on his feet, he just had no reason to continue to push forward because he was content and he actually wanted Luffy to escape.
He was content with how the fight had turned out, but I think the difference is that Luffy still had more drive to keep going than Kata. Kata had reached his limit and was content. Luffy was at his limit but was still more than will to keep going because he still had things to do.
If Katakuri had a greater drive, he might of kept going. But he didn't. Those who don't have sufficient drive end up as the losers to those with greater drive.
It was a matter of willpower and drive, and Luffy was better than Katakuri at the end of the day because of those things.
