Eh, I myself see things the way it is, without exaggeration.
The outpacing laser scene, S-Shark's punch scene, saving Bonney scene, Kizaru's beam scene, and that Nasujuro scene is good enough panels.
As for:
- "stare diff & bite diff" : Sanji's thing is Defense = so he will get shown to be attacked.
- "can't save VP" : his heart needs to stop to play the recording = so the narrative needed it.
All is well.

This arc was ok for Sanji, it definitely showed that he is one step away from the top tiers of the work

While it is true that Oda doesn't respect Sanji as much as pre-TS, Oda's treatment for Sanji in Egghead has been fair.
If you have complaints, it stems from your own expectations. For example :
- wanting Sanji vs Kizaru : the scenario is about escaping, also he can't win an opponent near Mihawk level now
- wanting Sanji beating Elders : it's their Introduction Arc, even Luffy can't do shit against them
