Agreeing to it because Shanks was the only Yonko reasonable enough to do anything to maintain the balance of the powers (and thus world peace) would've been a more interesting path to take the story down on.

I’m curious is anyone interested in Luffy vs Shamrock

The fight is most likely going to happen.

Oda might not do Luffy vs Shanks, which is why he created Evil Shanks in order to have Luffy fight "Shanks" without actually fighting the real Shanks.

Or the fight isn't a full battle and Shamrock is forced to leave Elbaf, allowing either Shanks himself or maybe even Sabo to fight him in the future.
