This is not a serious encounter, it's not a life or death situation. The only thing we can conclude from this is that Gear 5 Luffy with Zoro is too much for Gaban, which is obvious. Why continue the fight when the outcome is known, Gaban got the information he needed, Luffy is worthy of the key. It could also be that he stopped because of the HK's arrival. You're jumping the gun here and are going to realize that once Oda has Gaban show more of his strength in future chapters.

Ironically the only char I remotely care about in that org is blonde Ace. Dragon and the top brass were ruined by the Kuma flashback and their only chance of redemption is Dragon being presented in a cool and strong light when the time comes

Hell wink hurt Sakazuki and somehow Iva left Marineford with no injuries despite Sakazuki attacking them with Magma.

I know man, Tokyo Ghoul was a very unique and special experience to read. No other manga managed to stir up my emotions like Tokyo Ghoul ever did. Also, we can be thankful that we got a very decent ending at least despite things being rushed at the end. It'd end up way worse if we look at other mangas.
