Luffy listens Jinbe's story carefully, because it involves a battle between Aokiji vs Akainu:
Luffy only reacted when he learned Aokiji lost to Akainu (because Luffy thought Akainu could be defeated by Aokiji who is Teach's underling). Luffy is not reacting to Akainu's name, its about Aokiji failing to defeat Akainu and possibly dying, thats why Luffy immediately asks if Aokiji died in that battle, Luffy cared more about Aokiji.
Right now Akainu is just another puppet like 5 Elders.
He is a puppet that executes his own Marine soldiers who was begging for his family:
With the recent developments, Imu's power, Teach's bloodline, its clear Akainu fans aren't happy since its basically confirmed their idol is just a pawn who is inferior to even 5 Elders let alone Imu.
Now, I think Oda can make Akainu relevant once again only if Akainu stops being a boot licker Celestial Dragon cheerleader and if he isn't scared he would try a coup against World Government, then he and the Marines can be relevant once again.
