Sanji was slightly weaker than Blueno, then all of a sudden he beat Jyabura up
That’s because he wasn’t weaker than Blueno. He was tired and had to deal with 2 abilities he knew nothing about : Rokushiki and Doa Doa no Mi. The stronger character doesn’t always win against the weaker one, sometimes the outcome depends on the circumstances (the most telling example being Luffy vs Caesar).

I'd be be a lot more confident of Sanji vs King if it wasn't for the fact that in the last eight years we've had:

-Sanji vs Vergo. awesome moment, comes flying in, badass line, saves the girl, Vergo isn't the main villain so there's no reason he can't beat him. Result, broken leg and Smoker and Law vs Vergo
-Sanji vs Doflamingo. okay, nobody except the most deluded thought this was going anywhere. Result, Luffy and Law vs Doflamingo
-Sanji vs Judge. Sanji's evil swine of a father, murders his own men, threatens Zeff and Sanji's hands, aerial combat expert like Sanji. Result, Sanji actually saves him, then he saves Sanji.
-Sanji vs Niji. Utter scumbag, beat up a woman and disrespects food (Sanji's two big no no's), tormented Sanji in his youth, emphasis on his speed, another of Sanji's areas of expertise. Result, Sanji actually saves him, then Niji saves Sanji.
-Sanji vs Katakuri. Not one many thought would happen, but Sanji dodged his attack and the two were CoO specialists, so this was obviously going to happen while Luffy (snort, giggle) defeated Big Mom. Result, Luffy vs Katakuri
-Sanji vs Daifuku. Third son vs Third son! Daifuku slaps a woman, Pudding, who Sanji is trying to save! The two then have a clash where Sanji is sent flying (sound familiar?). Surely, a sign for revenge! Result, uh, Carrot dodges around him and Sanji blocks an attack.
-Sanji vs Oven. Heat powers vs heat powers! The two have a clash that Sanji comes on top of, but Oven then reveals himself to be actually competent and organises the plot to capture Luffy. Sanji has a plan to rescue Luffy. This is clearly Sanji's moment to shine! Result, Sanji needs saved by Germa and Ichiji holds off Oven.
-Sanji vs Page One. TBH most of us thought that Sanji had actually won that one, but alas. Result, to be determined?
-Sanji vs Drake. North Blue vs North Blue! Germa fanboy vs Germa hater/member! Both victims of the Happiness Punch! Result, to be determined.

History just isn't in Sanji's favour here. Nor is the fact that there are at least four (not counting Luffy) stronger allies who are setup to have a bigger role in the end of the arc than Sanji is. So when I see "why would Oda clash with King if he wasn't going to beat him?" I just look at the nine examples above and think "well, why did they happen?"

Oh yeah, Like Killer vs Zoro. Weaker guy won.
