Luffy vs Foxy is a gag fight that wasn't just about powerscaling. It's not like Gaban vs Imu.
But honestly I'm not mad at Oda for this. It just means that I should give up on powerscaling, because it's clear that even he doesn't care about it.

cuz i've been telling y'all on this forum, Oda didn't even care about powerscalers or powerscaling.
He is one of those "authors".
even then lot of other author, "The Strongest" which supposed to be the top 1 or top 2 got defeated by a Villain/Heroes who is either weaker than them or slightly stronger than them.
Not to brag but I've been on Manhwa and Manga industry for a lil bit.
But the Author way of thinking isn't about powerscaling, its only about how the story can progress.

Strawhat grandfleet or any other luffy companions does not stand a chance against the immortals. Does only luffy true awakening is capable to change the tide towards them?

Mentoring doesnt mean physical training necessarily, he helped shanks sanji luffy to get over their selves and put their shit together and was mad asf at zoro for not being competent
