Because I could be the guy who thought Mihawk is YC4 and believe that Zoro won't fight him at all after becoming his student, for example. I see how these things connect, but I also see many other possibilities that render such position about Mihawk potentially irrelevant.

Then the obvious question would be is "" WHo is his benchmark and how strong is he"

See, Zoro is a very uque character in this regard as we know for a fact how strong he should be EOS. Even Luffy is just vaguely "pirate king level" EOS and we don't actually know how strong that is. So everytime you scale Zoro, it must make sense according to that benchmark. If you are in the crowd of, Shanks is a haki man and Fujitora and Big mom aren't pure swordsmen so the real WSS is SHiryu (even though he also has a df) then its clear. Zoro's final form is around YC1-admiral level. And so from there we start Scaling backwards.

It goes on and On. you can;t scale Zoro properly without having an idea in your mind of how strong the current WSS is.

I give up, sanji topples zoro in speed and CoO, Zoro topples sanji in AP (including CoA) and endurance. It's clear to see they are the same strength in regards to their own specialisations

Does Sanji really beat Zoro in combat speed? The only speed feats Sanji have that can even be labeled impressive are a bunch of sneaks. Meanwhile Zoro has blitz the likes of Hyouzou (who blocked a G2 Jet Pistol Pre-Drugged), Killer, and if the image is anything to go by Apoo. I'll give Sanji the tip of the hat in terms of movement speed, but Sanji isn't getting shit else from me in the speed category.
