Take Viola's situation
Sanji turning her from enemy into ally was a very crucial point in that arc. The results:
-She didn't kill him
-She revealed Doflamingo's deal with the CP0, and Sanji could relay that crucial information to the rest, including Law.
-She sensed Nami, Brook, Chopper and Momo were in danger and notified Sanji so he could save their lives.
-She led Luffy and Co to the castle to fight.
-If sanji was killed or captured by Viola instead of turning into an ally, the SOP operation wouldn't be successful, since none of them would know about Doflamingo's real intentions.
Sanji left that arc vey early, but his impact had lasting effects on its development.
