"Sanji betrayed Luffy" is something only a distracted reader would say, but sure situation could've been handled better. Sanji and Nekomamushi were enough for capturing Capone, at that point they had to wait for the crew that was coming from DR to elaborate a plan.
In a nutshell, Sanji took the situation too personally, was afraid to be the indirect cause of Zeff assassination and to bring his crew down with him. What Sanji did was a 'sacrifice' not a 'betrayal', but acted impulsively.

So one piece of information of Pekomz is legitimate but the other is not because you do not believe it, that´s not how it works.
Pekomz is constantly negotiating with Big Mom to put her tantrums down, look at Fishman Island. He knows who he is dealing with.
It´s literally that, picking and choosing.

Its not picking and choosing. Since one thing is general exposition about Big Mom, and the other is something a character believes they can do. Which highly unlikely they cant, since the only way to stop a BM tantrum is to give her what she wants.

And again why keep bringing up Pekoms as if he could stop Sanji from getting to WCI.

Big Mom did not need Sanji, not really. Sanji was the reason for the Vinsmokes to come to WCI, since Judge wanted to get to BM´s might, but did not want to sacrifice his successful experiments, so Sanji´s bounty getting out when it did was a huge coincidence. Big Mom could not care less which son it is, the deal was the important thing. And it is enough to get the Vinsmokes to WCI in the first place, which you could have done without Sanji, or pretend Sanji is there and contact them, they only saw Sanji in WCI, not before, so getting them to WCI was not that hard. And finishing off the Vinsmokes did not require "an assassination plot", they were beaten within minutes during the wedding, Judge was bitchslapped by BM.

The Vinsmokes had to have their weapons stripped from them if the BM pirates wanted to destroy them. If not theyd easily escape with their boosters and technology. With no way in hell of the Meme Pirates getting them. Why else would she go to set up these extreme measures just to get their tech, its something they obviously cant get if the Vins have info that they attack.

Oda has done a shitty job to keep this cohesive and consistent, something that was required for us to still feel invested for the third time a crewmember leaves because of his/her past and the Strawhats need to save them, especially after the timeskip, and part of it is Sanji´s behavior.

How is this relevant at all ?

Why would Zeff immediately be killed if he takes a few days more? Where does this info come from?
How can you account for the journey through the fucking New World big brain?
Big Mom and by extension the Vinsmokes did not know where Sanji was, so how are they gonna set a time limit for him to arrive at WCI? Your point literally falls apart here.

Now that I think about it they had no intel about the rest of the crew situation unless I forgot something
So the manpower would have been Sanji, Neko and Inu. Not enough for 2 Commanders at that point of the story

Sanji was trying to save his crew from danger but he have to do it in a hard way (hitting Luffy) while Usopp self-consciously leaved because he can't leave his ship behind.

A character who is our focal point of exposition. All the stuff about being omnipotent turned out to be wrong by the way, proven wrong by the Strawhats as always.

And once again, already addressed. Nobody is saying he is supposed to turn her down, i am talking about buying time and coming up with a plan with the Strawhats. Pekomz is saying Sanji refuses, within days somebody will die. Not within days of Sanji not getting found his loved ones are going to die, huge difference.
Once again, the dude who gives us these infos thought it is possible to do it, anything else is just talking around the bush.
