Sanji is a gag character and his fights are gag fights. You just shouldn't expect Sanji fights to have the same amount of hype/badassery/coreography/tension as Luffy and Zoro fights. They never had. Mr 2 and Jyabura fights were also full of gags untill Sanji just decided to oneshot them.

I would rather have Zoro fight and defeat an actual Samurai (or at least an actual strong swordsman) than killing Kaido which would do nothing for his character or his dream. That's my only disappointment with Wano. Zoro being in a land of Samurai and not fighting a single one of them.
