I don't think I have ever seen Oda use anyone consistently coat their face with CoA to block attacks. Vergo has one scene in the anime, where he coats his head against Smoker, but I'm pretty sure that's anime only. Oda doesn't do fighting like that.

I like Shanks because he has a certain presence that other characters don't really have in One Piece. The same reason I loved Minato from Naruto. I like characters that don't show up often, but when they do, they have a big impact. That's all there is to it.
