Even if I hate all the ridicoulous wank Doffy gets I think that probably Luffy vs Doffy is the best fight post time skip, nothing really excellent but still very good: Doffy had his style which was interesting, put in Law and his gamma knife and then Doffy repair with strings and then Luffy reveal of G4 was the best part, at that point it was ssj Namek Goku vs Frieza but still pretty interesting.
I see a lot of people put Kata vs Luffy, maybe the rivalry was done better, Luffy stopping to fight Kata was pretty badass but on the other hand it was stupid as hell and already a middle finger to the reader, Ace died cause he got triggered by Akainu and tried to fight him and died for that, Luffy on the other side does something equally stupid but he wins, of course. What was also bad in that fight was the plot power, Luffy magically stealing from an enemy way stronger than him his unique ability only an handful of people in the world know midfight was pretty horrible.
