Again that was one time and only possible due to working alongside Pedro. Not a solo mission at all unlike Sanji sneaking onto the Puffing Tom by himself, sneaking up the guard towers on ennies lobby by himself, or sneaking onto the performance stage to save Momo by himself.

Luffy vs Blackbeard - DF merchant vs anti-DF merchant who happens to also be a DF merchant but with DF off ability.
Sanji vs Kuzan - Heat vs Cold. Sanji's most important fight in the show. It wont be any other scrub.
Usopp vs Augur - Sniper vs Sniper who happens to also be anti-Sniper due to warping.
Chopper vs DocQ - Cure vs Disease, the battle of doctors.
Nami vs Catarina - Beauty vs Beauty Hunter, a very important fame bringer for Nami due to Devon's infamy.
Robin vs Sanjuan - Size vs Supersize, the battle of giantification.
Jinbe vs Vasco - Water vs Alcohol, sea vs fire.

Zoro vs Shiryu - The swordsman vs anti-swordsman who also happens to be a swordsman.

I‘m not saying that Coby can’t get a one vs one (although I am saying that Coby will not get a one vs one against Pizarro).
I’m saying you can’t on one hand argue that Brook will not get a one vs one because he never has (which isn’t even true) while on the other hand argue that Coby, who genuinely never has had a one vs one, will. That doesn’t make sense as an argument.

I think it's a mistake to assume all battles will be clean 1v1s or only the SHPs will face the BBPs when it goes down.
I'm also fairly confident Yamato will be a full-fledged members of the SHPs by the time this showdown happens, in which case I could see him take a number of them, including Aokiji - if he hasn't left by then.
Sanji is the most difficult to figure out. The only analogue he has is Laffitte. They both operate in similar roles at least in so far as they will periodically detach and get shit done for the crew through stealth and subterfuge. That said, I also think Laffitte could work as an opponent for Brook or Robin.

I wrote this in another thread but the BBP matchups are tricky because the BB pirates have no inherent iron-clad structure like many other orgs. Like when Blackbeard himself left Hachinosu for example: no one was in charge automatically, like katakuri. There is also other oddities, the token sword jobber is not the one that is recruited first, like king, it's the OGs of Jesus, Augur, Lafitte and Doc Q.

Usopp vs Van Augur (They "interacted", although indirectly, with the Seagulls)

Zoro vs Shillew (Le Swordsman with a Meito)
Nami vs Katarina (She obsesses about pretty woman and Nami is constantly portrayed being vain about being pretty)

Robin vs San Juan (The 2 of Robins 2 solo fights were against giant/fat dudes. This also includes every time she participates in a team battle like Oars or Big Mom)
Chopper vs Doc Q (Le doctor, altho I cant imagine chopper fighting against 2 opponents (Stronger))
Jesus vs Jimbe (Karate vs Wrestling)

This seems a fandom headcanon thing. In the manga, not only didn't Kuzan and Coby interact at all, despite being present there at the same time. Coby had 0 (zero) reaction to his implied love interest frozen by kuzan. Unless I'm tripping there is not even 1 dedicated small panel in the entire hachinosu where Coby looks even angry at kuzan (or at all for the matter).
