There is no need to say it every single time, because it is obvious in most cases. Sanji is a normal human -> you can shot him. If he blocks it then it means he used haki. As simple as that.
The more important question here is why do you think DJ makes his body harder for what ever reason? You say there is no ''prove'' that he used haki to block the bullets, but you think that DJ, which never has shown an effect of ''hardening'', is the reason why he blocked the bullets?

And their is also no reason to show invisoble haki anymore. Sanji's leg is bare....if Oda want to show Haki. He wouldve showed it....Point Blank Periodt.
Plus I said it as a maybe that DJ increase durability since it does also increase DC....even though its just a leg on fire.
I think he melted or burnt those bullets with DJ. That is the most sensible answer.

But CoO doesnt have a way to see it.
CoA literally has two ways. Hardening and Advanced CoA. Like if Oda wanted Sanji to use haki....he would show.
At this point you can assume every base feat has some kind haki to it, which would then downplay all the feats.
Invisible haki was a thing pre timeskip. And everytime it shown....Oda mentions it. If be doesnt say they used haki....then they didnt. Simple as that.
