I wonder why?
No one yet has been proud of plot armor but there is a first time for everything I guess. 
When he cuts Kaido's head off, I'd like to see even one rubber wanker say that he cannot mince Luffy into pieces.

Luffy is actually much more resilient to cutting attacks than normal humans, because rubber is denser than human flesh. Thats why when Kaku and Kalifa hit him with a double rankyaku, at point blank range, that completely sliced the brick wall behind him in half, it did minimal damage to Luffy himself.

That holds true when he is slashing with his swords normally. But he can't control the cutting power of the Tornado after he has made the Tornado and is is going on it's own. He created a Tornado that had enough force behind it to cut through steel, yet the Fishman were left intact.
This is a Shonen manga. Characters are much more resilient than people are in the real World.

Zoro never needed Haki to cut steel in the first place, as "Breath of all Things" is not Haki. It's just a swordsman technique in which they can control the frequency of their blade and be able to alter what they want to cut, and don't want to cut.
Haki makes the sword harder, and thus makes it sharper, therefore it's impossible for Kyoshiro and Zoro to not cut a leaf in half if the blade was imbued in Haki. Haki in no way shape or form will ever make a Sword less sharp. That has never once anywhere in the entirety of the series ever been stated be an application of Haki.

You completely misunderstood what Arlong was saying. Luffy is practically immune to blunt force attacks unless they are imbued with Haki because he is made of rubber. He is susceptible to cutting attacks though because you can cut rubber, ergo that was his "weakness" pre-timeskip. It was not meant to be taken in the same vein as let's say, water being fires weakness.

▪ Haki lmfao even with haki he got cut and bleed from Hody's bite and he nearly died because of it .
I literally just said it is a weakness, but it is not a weakness in the sense that you think it is. Literally anyone can be cut with a Sword, and Luffy is no different. Luffy can't be harmed by blunt force, ergo, cutting attacks used to be the only way to hurt him. It's such a simple concept, but you're overcomplicating it.
It's funny how you are using "breath of all things" as if thats not a fan made term that doesn't exist in the manga

Anyway this is the Mihaqk cutting Daz bones nonsense. A random slash from Mihawk was dodged by Luffy and it sliced through an island wide iceberg. Then abother a random slash just landed on Daz bones.
Suddenly Daz bones has mountain level durability since seemingly the same attack that cut the iceberg did not even make faz bones bleed.
As if it's not established that Haki is literally the primary source of swordsman power and can control everything from power output to actual destructive capability of any sword attack by master swordsmen
