Because Oda thinks this makes sense. Or maybe he just want Luffy to be considered underdog in his upcoming fights.

GB is afraid of Kaido but not afraid of the group that defeated Kaido. Very cleaver.

Of course he cant beat Shanks and his whole crew by himself. But Shanks knew he had to intervene pretty hard to get GB to back off. And Momonosukes ability is no joke as well. And you saw how Luffy, Zoro, Sanji and Jinbei where aware of GBs presence and ready to fight him as well. It was stupid from GB to do such a thing all by himself, as Akainu told him not to do anything reckless. But I doubt they could have beaten him if he got serious. His power is immense.

In which he played all the time (Kaidou's words) except for the last attack which is the first attack of exhausted G5, all the while in near-death condition since his previous damaged state (Momo's words).
Kaido was like 10% and joyboy is always playful. Reminder that Kaido could have dodged the attack and he was also lifting onigashima which consumes his stamina. Momo was exhausted only by lowering it safely

Why does he want Luffy's head so badly. Luffy just helped Aramaki out by taking down the big bad monster. Shouldnt he be thankful like Fuji was. Or at the very least let him be like Aokiji and Smoker did ?

But no....Greenbull wants Luffy's head very badly. To the point it seems personal.

Second question. If Greenbull was so afraid of coming to Wano because of Kaido. Why doesnt he do the thing he wanted to do in Wano (when Kaido was ib power) now....since Kaido is gone. Why is he saying he'll be on his way after capturing Luffy ?

Unless....there....wasnt....actually a thing. And GB wasn't talking in literal terms.

Third question....if Aramaki is afraid of Kaido, why is not afraid of Luffy. Luffy did defeat him after all.
Because it's better to crush something that is promising before he can get even further.

I doubt Aramaki believed that Luffy soloed Kaido so he wanted to decrease the chances of Luffy getting even further with his potential.

It’s because Greenbull wasn’t afraid of Kaido. He isn’t afraid of anyone, but that doesn’t mean he can’t respect his opponents’ power or status.

Kaido kept everyone away from Wano, not that Greenbull had any reason to go while he was there in the first place.

All this has always been obvious, disingenuous attempts to power scale aside.

Defeating Kaido and Big Mom was a team effort, that is why. So he might even think that Luffy is equal to Law and Kidd.

Luffy is Emperor not just due his power, but his military power.

And GreenBull has daddy issues with Akainu, he wants his recog.

It's a textbook example of why the Yonko's don't fight in the first place, because no matter who wins, the other one, and their crew will be too injured to withstand an assault from another Yonko/the Marines.

Aramaki isn't stupid. Even if he knows Luffy is weaker than Kaido, he knows that he is still strong enough to go toe to toe with him, and powerful enough to be able to put him down under the right circumstances. He also knows that Luffy is still recovering from this massive fight. This is the best time for him to strike, because once Luffy and his crew recover, they will be much, MUCH harder to deal with.

He's not here because he thinks the man who just put down Kaido will be a cakewalk to fight. He's here because he knows that this is the best chance they have to put down the man who just took down Kaido, because that man and his crew is still injured.
The problem is that it aint 1 admiral vs 1 emperor, it is the marines vs 1 Emperor crew and that includes at least 3 admirals.
