I think the pure numbers of the BM Pirates does make it difficult for the Strawhats to win. Even if we are just counting “main fighters” there 10 Strawhats vs, say, 20 Big Mom Pirates? Not wanting to count them all but the SC, the Vets, the main Enraged Army, Struesen, Tamago and Pekoms, that’s quite a lot.

This then made me leap to how mad it is that EoS Luffy, based on Joy Boy’s Haki vs the Marines, could literally go solo against Big Mom and her entire army, and just by CoC alone wipe it out to Big Mom and (maybe) the SCs.

It matters because the pirate captain of one has a higher bounty and is regarded as more dangerous. It's the same reason Zoro and Sanji's bounties fall below King and Queen despite beating them.

Show proof of anything you say or just stop talking cause your headcanon is getting ridiculous since it directly contradicts the manga with Marco directly attributing their strength to being worth over a billion berries but you think they’d be worth less than a billion with no change in strength. Bounties isn't about one's strength per say but rather about their threat level. If Person A is stronger than Person B but the World Government or Marines deems Person B more dangerous, chances are Person B gets the higher bounty. It's obvious the Sweet Generals and Lead Performers are on the same playing field, but the Lead Performers have a higher bounty on average because the World Government deems the Beast Pirates more dangerous. It's not about being stronger, and even then, Oda has outright stated they can't fully assess the crew mates power levels.

Like stop trying to headcanon away a legit quote from the manga. King and Queen are canonically strong enough to be “Worth more than a Billion” that’s fact. So no Queen would not be worth less than a billion as a sweet commander cause again that’s just a dumb thing to say.
