Well, it was fatal hit which didnt kill him but K.O him. Luffy would had endured the same attack in different places of his body which aint his head.

Katakuri haters is composed mostly by proxy. King, Zoro, Law, Kidd, Marco fans; or Sanji haters. Some others are people who thinks powerlevel>everything.
Why Sanji haters too you ask? Kaido proves us that if you're faster than the FS user, it can be bypassed.

The dude himself has an okay personality (especially if you like the caring big brother type), okay brain, good design, good gag, and okay combat style.
