Zoro would be dead if chopper is not there. So somebody should care.
They are more unique, but that doesn't mean they have some special plans for the fruit, and they absolutely need it. If it's meant to be a powerful fruit, then losing it alone makes it a serious crime in their eyes, because it could have been fed to a member of their ranks, thus increasing their military power.

Depends what destiny is, it's one thing for events to happen and another for something to happen thanks to events.
Basically if Luffy will achieve something since that's what's written in the cosmic book of gods then fate is determined but if Luffy can do something in this specific time because events are lining up then you still make your own fate, specially if events had lined up during the void century and Joy Boy failed so now it's someone else's turn to try.
