Hanuman once went to eat the sun thinking it as orange. He once lifted a freaking mountain full of medicinal herbs and flew with it since he didn't want to use his brain to find the medicine . But what's the point for Luffy to fight Akainu if he legitimately surpasses Kaido, who has near peak Haki and a Dragon fruit that gives him monstrous physicals (durability, endurance, recovery) and now even a flame mode that melts everything he comes into contact with.

It would become Luffy >= Kaido > Akainu.

Oda does not care about power levels as much as we do. If he wants a fight to happen he finds a way even if it goes against fanmade power scaling.

Kaido is also stronger than Shanks so what's the point in Luffy ever confronting him?
Luffy hinted that there will be a confrontation in which his crew establishes themselves as superior.

Luffy vs Akainu has far more build up than any other fight. I always mention the scar because we all know how much it means between "rivals", we had several examples already.

Btw: Luffy will not be above Kaido post Wano. He'll probably be even weaker than Shanks
