Kaido specifically chose a sword, (and King's sword for that matter) when he's known to use a club to finish people off. He obviously knows how Orochi's powers work.
The Orochi tales say also that he has to be cut to pieces to be killed for good.
Plus what says that the blood we saw coming out of Orochi can't be ink like the blood coming of "Cracker" was in fact jam ?
And we have seen many times characters being fooled and not sensing someone being alive or near before in OP despite them having Coo. The consistency with Coo is hazardous at best.

Orochi's death would have felt more permanent if Big Mom had just took his soul instead of Kaido beheading him since his DF is the Yamato no Orochi. Given what that mythical creature is capable of doing, there's a chance that Orochi is still alive.
