Since Oda isn't getting any younger, ideally the best solution would be training young assistants to copy his style so he could mainly focus on the writing but yeah I guess pride won't allow him to do that
If that would be so easy Togashi would long time ago did the same. But both Togashi and Oda are the same, they are proud of their work and pride plays a huge role. In fact they don't even dare to use ai or other Methods.

Is there a reason why he doesn't hire a team to do the drawing and he can just do the writing?

I'm sure there would be hundreds lining up for this job.
The reason is Oda is more of a drawer than a writer, what he loves the most is designing. And even if this wasn't the case, you guys can't seriously expect an artist to stop doing part of what he loves, though the way you phrased this it sounded like you really underestimate drawing in comparison to writing and believe the second is more important and deserves more attention "just because".

I really think he has to let his assistants do more. Maybe do the pencilling and let the assistants do the inking.

And Oda could still design new places and new characters.
I think it's much more convenient to pen the ideas on your own on copy even if they are in form of illustrations than to tell another person and then expect him to do it on your behalf

well of course, and I think that's why it will never happen. Oda seems like the type who wants complete control over his manga, not that it is a bad thing in itself.
