Which begs the question of why Mihawk needs the strongest weapon if his haki is the strongest
A fodder blade wouldn't even withstand Mihawk's all out power. It was said a supreme grade blade is capable of withstanding the full force of Haki of someone of Whitebeard's and Roger's caliber. Also, mastering the strongest weapon is testament to a swordsman's strength, as someone too weak for a strong blade wouldn't even be capable of controlling it.

Also, pointing out how Mihawk uses the strongest sword disproves the idea that it's just about skill. It's about power. And the strongest blade > a weak blade with Haki equated.

I didn't know only certain object coudl withstand haki at that level, must have missed it in the manga.
I thought Haki hardened things by making them practically a part of yourself, like the silly arrows in Amazon Lily?

From Cambridge Dictionary:

SWORDSMAN definition: 1. a person skilled in fighting with a sword 2. a person skilled in fighting with a sword.

Simply having a sword doesn't make someone a swordsman by itself, but being skilled in fighting with it does. Shanks is definitely a skilled swordfighter because he had a history of swordfighting with Mihawk.
