Because Doflamingo is fast and unpredictable himself, especially parasite. And Sanji being good at CoO doesn't mean his CoO is at the peak. And what about Oven? He blitzed Oven so fast he didn't even realize what happened.
It gives him greater attack potency and speed. His attacks also have various applications. Like Hell Memories setting the target ablaze in the process. Against Jabra, the fire burned through the flesh and reached the bones. As such it is more versatile and effective than many other fire-based abilities. Dunno where the hate comes from.

i will say this, its not even sanji fault, he has one of the most unique and cool fighting style out there, but oda doesn't always deliver , cause lets be real, oda really suck at fight scenes, that's why the man relies to many offscreen, if you compare his work to other manga, even fairy tale shits on him. his idea's of good fights was only selected on MC, which is sad cause OP is a battle manga.

Besides I don't think he even would try that if it was not the invisible one which he always wanted but as we know, CURTAIN SOMEONE HAS IT NOW and if he wanted it he would had to kill the guy and find a way how the hell Blackbeard slurps the fruits out of humans.

Sanji's abilities work different. He is not simply burning the opponent, it is a side effect of his main ability to physically hit harder and faster, since Sanji is not simply imbuing his leg with fire but massively heating it up. There are abilities Sanji uses Sabo cannot use. Plus, Sanji's fighting style always was based on kicking. DJ and IJ are just enhanced versions.
It's like saying Luffy's Red Hawk and Red Roc are boring and useless because Sabo's fire > Luffy's fire. Doesn't really make sense, since Luffy's main fighting style is punching, and that fire just boosts his punches.
By this logic Big Mom's homies are useless too, since fire and lightning logias are above that. Luffy and Zoro by the way too have very simplistic fighting styles.

Because Sanji is not covering his legs with fire. He is massively heating up the leg itself, which greatly increases the attack potency and speed of his kicks.
You sound quite retarded to me, given you cannot even comprehend simple logic. The Gum Gum fruit is not a fighting style. It just gives Luffy the properties of rubber. His fighting style is mostly punching in addition to some kicking. With his Gears, he can boost the attack power and speed akin to Diable Jambe. Red Hawk and Red Roc are just the peak, as the heating up/fire allows Luffy to hit as hard as possible in these modes. But Luffy does not attack with fire itself; the burning is just a secondary effect. The primary effect is that Luffy can hit even faster and harder with his burning fist. Sabo cannot replicate that.
It's the same with Sanji or even better, since he developed an entire mode around his heat/fire based kicks.

But even with that considered, I think Sanji still has the most fighting style in the series.
