The Straw hats have never officially had a vice captain but the fandom basically accepts Zoro to fill this position.
However is this still true now that Jinbe has officially joined the crew, with his wealth of knowledge and experience and he would be just as good as Zoro if not better at fulfilling the role.

Zoro is only vice captain to fanboys like bartolomeo. The real vice captain is Usopp,
- luffy agrees hes vice captain after he joins
- he self identifies as vice captain in Alabasta,
- luffy trusts him with the straw hat and makes him corner man in Davy back fight,
- fought luffy over the ship and crew because he didn't think the captain respected his nakama enough (real vice captain shit)
- always has his opinion heard and trusted on tactics and plans, he is the brains of the crew in terms of this (chopper, robin, and franky are more specialized in knowledge but usopp knows some of everything and can put it all together. He built the clima tact, he knows the basics of ship building, he's a botanist, he's a lookout, he's a sniper, hes read a lot, etc)
- usopp is luffys best friend. this is minor but it's true and relevant.
- he calms down fights between crewmates and keeps ppl working together
The man is the glue that holds the straw hats together. He's the Rayleigh of the crew and will be a monster on all fronts end of series. People do not like to admit this for some reason because zoro stans think this is zoro piece, but zoro is not a leader. He even knows this and brushes off the suggestion he might have conquerors haki because he's aware of his role.
He's a combatant, the best fighter on Luffys crew and someone who could beat luffy if the circumstances came to it. There is nothing wrong with this. Luffys crew "does things he can't do" and Zoro is there to be the heaviest hitter in the world. His entire goal is just to be the strongest. He doesn't want or need followers or friends and follows luffy because luffy is the Deva to his Asura. Not vice captain material.

It's like saying Lucky Roux should be Shanks' vice captain. Lucky is there to kill people better than anybody else Shanks has. Benn Beckman is there to make plans.

The only time Luffy has ever discussed the idea of a vice captain was when he agreed on Usopp taking charge of the ship if he ever couldn't fulfill his duties in an early chapter.
Personally, I think that the idea of a vice captain doesn't fit at all in the dynamics of the crew. Luffy is more of a democratic leader and the hierarchy of his group is flat as he understands how every member is equally important. But if I had to choose an official vice captain, I just can't see any other member matching Jinbe's experience.
Also, this may be an unpopular opinion, but I'm pretty sure that Oda was mocking those who defend that Zoro is the actual vice captain when he wrote that Bartolomeo line stating "he's the person recognized (BY ME) as the vice captain...!".
He was stated as Combatant. His vice captain role isn't official and nothing makes it different from Franky driving the ship before Jinbe or Usopp fixing the ship before Franky. Actual vice captains like Beckman are explicitly addressed as such.

There we saw Zoro will overrule when he has to. He gets on himself for occasionally for letting his guard down, but he's always first line in the best interests of the crew. Even when he had nothing against Robin for example, he refused to be won over even though he came to her aid without hesitation.
Usopp is still the only person who risked his life to challenge his captain over the best interests of the crew and the Merry saved their lives because of it. Hell luffy should be the one apologizing

We still have clear evidence in the manga were Zoro is outright stated to be the right hand and vice captain.
Am not sure what more is needed. Does Oda need to make an intro box that spells out Zoro is vice captain for you to believe or does someone in the SH need to call him vice captain for you to believe.
This also doesnt always work as we have Mihawk for example who was has into box stating he is the wss, there are multiple people in the verse stating he is wss but people still dont believe this.

Yes lol. When all of your evidence is "random people who don't know them say he's vice captain and the data books say he has a "vice captain LIKE role SOMETIMES" that means he's not vice captain. You know what would make him vice captain? Literally saying it outright like when Luffy agrees that Usopp is vice captain or when Usopp says "as vice captain, I have to take charge" in Alabasta
