Yeah they do.
I never really thought that Sanji needed the vinsmoke background, but I enjoyed it after a while. I dont think Zoro needs more background, but who knows. It might be cool as well.

its more actually oda wont draw fight anymore, thats why cook only BS appear
hell even he dont draw sanji cooking alot
missed opportunity to not make a strength dish to buff samurai n hyogoro

He misses a lot of those.
I think he has time constraints.
People say he has the freedom from editors to do as he pleases, but even if that was truth, there is something Oda can't ignore. His health.
And it will only keep getting worse.
He will keep speed some things up, and offscreening others, making fights shorter. Dude is on a countdown to be able to finish this.
