She is only a background character without personality,depth or relevance. It would be garbage writing if Chopper's big love end up being a girl like this.
Chopper's big love need be a prominent and complex female character.

Not that I disagree, but why, though? Background character ended up with a central character happens all the time in fictions.
Okay, for your two other questions:
- Well, Chopper was controlling a giant robotic version of himself on it. So, maybe, Chopper's final form is a giant mode he can control freely?
- Both his older features kinda look like if he integrates with the minks, tbh. Although his good future obviously spells his never losing humanity, while his bad future is a wild beast (especially with his talk about sacrifice).
