Remember how Law could swap people’s souls with no established limits? Imagine how easy it would have been to swap Doflamingo with a nearby fodder and then kill him? Things like that.
Why would she use that ability here? She wants to know where Luffy is, and find Zeus. She obviously wouldn't learn either of those things if she just snatched their souls.
Not to mention, you're forgetting that Big Mom doesn't kill rare animals. She collects them. Hence why she wouldn't just slaughter Chopper.
It's almost like you just want the characters to act the way you want them to instead of acting in-character.

So? She can grab just one of the lifespans. Even in her tantrum she can take the lifespan from a running person and select the amount of years she will steal, yet this is sane Big Mom and you're telling me with an unnecesary condescending tone that she can't grab Usopp's soul because they are running away and together? Even if she just kills them both, what prevents her from simply putting some years back into Chopper and leaving Usopp dead just like what happened to Moscato, who died but Mont-d'Or made sure to recover every piece of his lifespan so he reappeared alive and fine?
