Because Sengoku said
He only agreed to it because Shanks was the one to ask
I guess you can say its a respect thing but I don't think Sengoku is the type to stop a war over a mutual respect
Shanks being able to stop the war was a combination of many factors not just one
His connection to the Figarland
His crews strength
His commanding presence
His level of respect
The fact most people there where exhausted and on the brink

It's both power(fighting ability) and status.
If Kaido or BM comes with their whole crew and ask them to stop the war otherwise they'll also join and continue the war.....any sane person will agree with ceasefire and Sengoku isn't an idiot, even a madman like Akainu if he was in Sengoku shoes will do the same.
Shanks asking to let Ace and WB body return to the pirates for proper burial and Sengoku agreeing might have to do with his status and noble family tho, plus trusting him.....

It never made sense. Even if Sengoku knew of Shanks' identity, his heritage won't give him authority over the marines given he is a great pirate and Yonko. Doflamingo's family was part of the Celestial Dragons inner circle, yet he was treated as scum for a decision made by his father and becoming a pirate with no privileges.
Shanks stopping the war was just a mixture of his power (individual + crew) and his diplomatic nature.
