Because they capitalized on the two things that people like the character the most for.
Sanji - They capitalized on his fighting choreography and character moments for the anime and gave beautiful scenes that highlight sanjis fighting style and character.
Zoro - They capitalized on his strength and strength of spirit and gave jaw dropping visuals that made Zoro and king look like absolute powerhouses

Are we still going on about this, this is just sad.
Yeah 1062 was a better episode than 1061 but that doesn't mean 1061 was bad, 1061 was a really great episode as well and the animation for that episode was also really good.
Why does it matter which episode was done better? Like who cares, both of them were enjoyable and to me that's all that matters.
I also want to point out, that plenty of people including some Zoro fans were complaining about the Zoro vs King fight in the anime before 1062.
1062 was better when it came to the fight itself and the animation, and 1061 was better when it came to the character focus and the writing.

From beginning to end sanji vs queen is a lot better than zoro vs king in the anime

Zoro vs king was more of a visual spectacle. Like anime king lowkey low diffs his manga counterpart with how much he was highlighted
Sanji and queen has a bit of everything with fluid easy to understand choreography and really hits the emotional sections

Zoro represents Japanese people, bushido ideology, katana etc, so Toei inevitably become Zorotardish and consider Zoro their golden boy in anime.
Meanwhile Oda kinda neutral in his own manga portrayal regarding Zoro's fight and Sanji's fight...but Oda's fetish is to humiliate Sanji since the start of timeskip by sending him to Kamabakka, shaping Sanji's Year as Sanji's Sadboi Cuck Year and such...and Oda let Toei cook whatever they want the fight of Sanji vs Queen and Zoro vs King to be, so this difference is the result.

Sanji clips nice, you have a beautiful scene with him and Zeff then later proceeds to a fight which ends in a nice zoom out explosion after the attack.
The Zoro clip looks so stupid. One Piece Super, face getting weirdly distorted for no reason, looks like mf is up in space jumping around on rocks.

My main problem with Sanji vs Queen is that, no matter how fluid or "auraless" it looked, i, not even for once felt like it was two high tiers fighting. They looked comparable to Who's Who and Jinbe. They lacked impact and power. It was underwhelming, simple as that.
With Zoro vs King, I could see and feel that it was a fight between the so-called God and the "King of Hell", like it was supposed to be, fast, powerful, flashy, with over-the-top moves and techniques.
