Let's say that we get a fight between a fully recovered Jack and a fully recovered Sanji. Both at full strenght. People who think Sanji fighting Jack would be trash, why? Third commanders are very powerful fighters in their own right and are not to be disrespected. If I wanted to be cynical I would say that the answer is simply related to Zoro and his current role. And nothing else.

Defeating a commander 1v1 is a bigger feat. The scabbards hurt Kaido, even Raizo hurt Kaido. Neko and Inu couldn't defeat Jack 1v1, they defeated Jack 2v1 in Sulong form.
