What we might get from Sanji vs Queen is;
1. Pros; 😱
> A little flashback story from Queen side. (interaction between him and Judge and why he hate Judge)
> Sanji awakening his lineage factor.
> Sanji get black flame (combine his fire with his CoA)
2. Cons; 🥺
> Fast vs Slow (i guess... unless Queen become slim 🤣)
> no CoO use in this battle.
> no Aerial battle (unless Queen has Jetpack but will not be better as Sanji and King clash.. and Queen's neck LOL)
However, there are still chance to get Sanji vs King as what you guys just said.. but i do hope you guys set your expectations low since we know how Oda writing skills.. so you guys won't get disappointed..

Yes, I think there's a lot of potential to explore Queen's background and his connection to he science team once composed of Vegapunk, Judge and likely Ceasar before they were disbanded and Vegapunk was captured by the WG. But, as you said, we should keep our expectations low.
About the "cons".
CoO can be used. Queen is basically Inspector Gadget. You never know what whacky weapon he might use next, so CoO can play a huge part in dealing with unexpected attacks from Queen. Sanji COULD be the best person to deal with that. But, once again, expectations low, really low, like...CoO is, to me, the most inconsistent type of haki and it's not really a competition. So...yeah...
And about the aerial battle....
