Is this your first time reading One Piece? Opponents rarely fight the same way twice. Katakuri's initial fighting style was splashing Mochi everywhere. Doflamingo was more into spamming 5 colored strings. What he does is to hint at the powers carefully until they have their true battle.

We saw Katakuri’s main combat attribute, future sight, right off the tip and honestly I never felt like Doflamingo’s fighting style changed, he just showed more moves as the intensity of the battle increased.

Queen is fundamentally different, the vivre card and Udon chapters presented him as a primarily physical fighter who’s penultimate attack against a Yonko was a head butt. That’s completely different from the bizarre cyborg action we’re getting now.
