Honestly I'm fine with Sanji not having any big moments during this arc.

He already had his moments during WCI and Wano.

The one Straw Hat that I really want to see have a big moment during this arc is Franky.

Feel like we're going to get Dorry and Brogy vs Saturn soon.

The SHs and Bonney need to escape. The VAs are back at their ships, the pacifista are under Bonney's control, and Luffy is fighting Kizaru again. The only threat that hasn't been stopped is Saturn.

There'd be no need to hype up the giant pirates' arrival if they weren't going to do something major.

So yeah. I think the main egghead fights will be:
Luffy vs Kizaru
Dorry and Brogy vs Saturn
Zoro vs Lucci

Eventually, Saturn will dominate Dorry and Brogy, but they will probably get saved by the ancient robot once Luffy finishes charging it up.
