Coby escape couldn't take hours but also an old legend like Garp getting packed quickly in 1 vs 1 would be an awful treament, the stab was merely a plot device to give Garp some excuse.
By only giving Kuzan the credit instead of BBP, with Teach literally saying only Kuzan is able to perform such feat, Oda's intent on the overall fight should be viewed is clear.

He went serious against Yamato in Hybrid and she held it down and then G2/G3 Luffy pushed him into drunken mode and wasn't even dominated in it but chose to go into G4 willingly.

You all were fooled by Kaido taking attacks from 9 guys that could never hurt him. They never had the means for it. Luffy stated even his attacks post rooftop weren't deep enough.

But the Yamato fight was really the worst of all. Old Garp might actually one shot Yamato with blue hole.
