With Carrot aiming at destabilizing the fleets as fast as possible before the sunny went down as emphasized by Daifuku himself, and Daifuku indirectly helping in the task because he was too incompetent to hit a Carrot(even with named attack) who wasn't even entirely focused on him
So look at this, and imagine Sulong Carrot entirely focused on Daifuku, and she'd be able to casually dodge and land hits on him(especially in his case where he is too focused on his genie for his main body to fight properly) and do damage with her electro
Place this Sulong Carrot against Perospero then(eventhough i think he is stronger than Daifuku), and she should be able to do just fine, especially if Sulong Wanda is here for help

meaning she would lose consciousness waaaaaaay faster than she did while dodging daifuku

No, because in the manga scenario, Carrot had to take care of Daifuku's entire fleet before they sink the Sunny. It was a situational scenario where Carrot had to more focus on destroying the ship's wheels with Daifuku and the others just being collateral damage, yet despite that, Sulong was easily dodging Daifuku's attacks.
In a 1 on 1 scenario, Sulong Carrot will entirely focus on Daifuku, and thus will have all the time in the world not only to dodge his attacks but aim at him directly to do continuous damage to threaten if not beat him
