Lets look at Fundamental reality, currently and all the BS aside Haki is the gold standard for power scaling, which might change in the future but Kaido's established Haki Trumps All still applies.
AdvCoC is highest Level of Haki followed by AdvCoA followed by AdvCoO and it goes by the order in which main character learned these Hakis.
Zoro already has Two AdvForms of Hakis and is very close to Luffy.
Sanji is far below in the mud.
And Sanji's ceiling is bare minimum Yonko level but this Zoro being very close to Luffy and Sanji being far below in the mud would continue.
So Zoro would be able to low diff a Yonko EoS.

Ok, although I think it's a stretch since it is doubtful if Zoro will be stronger than people with bigger narrative importance than him (like Law, Sabo, Kidd, etc), I think Zoro reaching peak human tier is at least believable since that tier is so wide, anyway.
But Zoro reaching PK/PK+ tier? Now that's definitely reaching, man. Zoro will never get a chance to beat a Yonko, so it's already suspect if he will ever reach Yonko tier, let alone PK/PK+ tier.
Even Zoro's goal (Mihawk) was stopped by a YC3 and then a YC5. Even if you said that was PIS, there still is not enough narrative or power for Mihawk to show anything close to WB or Roger, for example, considering WB was able to destroy the world and Roger was able to fight him 1-on-1. I don't know how strong Mihawk will be written as, but he definitely isn't gonna be able to destroy the world.
