I provide you scenes showing Diamond Jozu use his powers. You're the person who believe he didn't completely cover his body in diamond. His body wasn't covered at all before the attack. You can't actually see his body he blocks your attack. It's foolish for me to believe that he wouldn't use Diamond to completely block the attack and that is his power and we see him using it.

You're completely twisting my words. I never denied him being a swordsman, but it's silly to just brush him off as that and leave it at that. If you think that's all there is to it, go ahead. But Oda himself says differently.

Zoro could become the strongest by beating Mihawk but without actually having defeated every other swordfighter in the series, so why does this not apply to Mihawk?

Vista was like the only other swordsman of renown we met by the time we reached Marineford and it seems he and Mihawk had never even met before. Again, Mihawk seems to have no interest in fighting Shanks due to the loss of his arm. Nothing seems to point out that Mihawk has actually provenly defeated every other swordfighter in the series.

The title seems to work much like how a boxing or wrestling title would: Whoever defeats the champion becomes the champion.
So as far as we know, WSS only means two things:

1. That Mihawk either defeated the previous world strongest or earned the title through accomplishments like with the Pirate King title.

2. He hasn't lost since.

It doesn't mean that he's challenged or been challenged by, and then defeated every other swordfighter in the world.

This is why you can have characters like Shanks, Big Mom and Fujitora, and still have Mihawk be known as the strongest, since chances are none of those characters have gone out of their way to challenge Mihawk for the title.

Shanks is just the most obvious because MIHAWK HIMSELF stated he had no interest in fighting someone who lost an arm.

Stop acting as if "World's Strongest Swordsman" means he's actually beaten every sword fighter in the world, that's just not possible.
