"Off handedly" is not how this story works. Everything ties back to the main plot. I've never understood the idea that Zoro will magically fight Mihawk for 5 chapters after everything else is over. That's not how a story climax is typically handled. That also implies Mihawk does nothing relevant for the whole war.
This is why I say he will probably ally with Shanks, and depending on Shanks' ulterior motives, he may in fact be the endgame antagonist/fight. With Mihawk allying with Shanks, youd have your relevant endgame fight.
I'd say, let's continue this conversation after we know where Mihawk goes post-Wano. If he allies with Shanks, then you'll hopefully see what I mean here.

Oda has based Eustass captain kidd off of the real life pirate named William Captain Kidd. Infact the story goes:
"William Kidd, also known as Captain William Kidd or simply Captain Kidd, was a Scottish sea captain who was commissioned as a privateer and had experience as a pirate. He was tried and executed in London in 1701 for murder and piracy. Kidd had captured a French ship, commanded by an English captain as a prize".
"He was Convicted on all counts, he was executed by hanging on May 23, 1701. In later years, a colorful legend grew up around the story of William Kidd, including reports of lost buried treasure that fortune seekers have pursued for centuries".
"He was publicly shamed during the trial, which ended with Kidd being sentenced to death. He was hanged in 1701. But even that didn’t pass properly. The first rope around his neck broke and he was actually hanged twice. His corpse was left to rot in the Thames River as an example to whoever had aspirations to become a pirate".
"He was deemed histories unluckily pirate whom had to watch his crew die was publicly shamed, was hung twice, and even after death they hung his dead corpse in humiliation to detour others from becoming pirates"
So the important thing oda has kidd for is being the only Supernova to die to further inspire luffy

Why would he not beat them?
He's straight up an improved version of King with a more balanced set of abilities, hotter flammes and better speed, he doesn't need to sacrifice his durability to gain speed, and his durability is higher than that of a normal ancient zoan, he also has a healing factor on top of a high durability
Katakuri is only a good fighter when it comes to fighting glass canons
Sanji can tank any of attacks head on and can counter his futur sight with his speed and observation haki
Katakuri FS would demolish Sanji and if he got hit by mocchi donut he'd be KO'd. Luffy even with FS and snake man which is faster than current Sanji couldn't hit Katakuri.
