Usually the doomsday time bomb plot device of the arc is what comes up next until Luffy’s fight
but whats interesting this arc is that Luffy’s fight IS PART of the doomsday time bomb… if luffy beats Kaido like right now, The flame clouds disappear and the island falls… If luffy takes a while to beat kaido, Kaido will himself just remove the flame clouds and drop the island… If Luffy takes a long time but Momo does manage to create his own flame clouds, Either the castle fire or Kanjuro’s fire demon can still blow up the island while all that is happening

Lol did a count yesterday, did you see? If you count from when Zoro's fights end as the "beginning" of Luffy's fights, they (Croc, Lucci, Doflamingo) are all over 10 chapters when you include the main plot. Katakuri is longer, about 18 chapters, but he's the only fight in WCI.
If you do that for Kaido, it would mean the fight starts 1036/1037 because that's when Oda started focusing on it. This would also mean that likely at minimum, it ends late 1040's but the arc still has so much going on it will probably be in the 1050s or 1060s.

He wasn't up and fighting - he was barely alive after that. That's mad impressive though don't get me wrong.
In the WsW fight, we were narratively shown that WsW's rokushiki moves could break Jinbe's CoA initially. And then Jinbe took a whole Barrage of Finger Pistol Spots before he intensified his Armament. I don't think Oda wrote that scene with the intention of showing Jinbe not suffering any damage whatsoever from those attacks. I'm not saying he was severely damaged as well, but he took damage imo.
Somewhere from moderate to high difficulty, leaning towards moderate, seems fair to me for the fight.
