Ever since Sanji disappointed Luffy in Drum (against Kung Fu Dugongs) and Skypiea (against Satori) he lost all faith in his fighting abilities. Compare that to how Luffy reacted to Zoro getting defeated by Enel (how could this happens with you here, Zoro?!) and his complete faith in Zoro vs Sea Train.

Then of course we saw it in Wano when Luffy thought Sanji was way too slow on their way to the roof top while Zoro proved himself over and over even on the roof top against Kaido and Big Mom.

The crew was not even there just half of it. They just added the Big Mom killing plan with Bege because they got help and could used it to help Sanji to save his family. Also Luffy decided to stay to "beat" Katakuri (he never did) so he could learn FS and fullfill his ego of beating a billion berry man.

Just like how, this very chapter, he has decided to stay and fight Kizaru and Saturn to let everyone else escape lmao. And yeah he beat Katakuri lol, i can show you an image of Luffy standing over his body if you want:)

Here is the same they already agreed to escape from the island. And since fighting Kizaru will teach nothing to Luffy unless that he can't beat Kizaru. They have to escape.

I like Luffy's fights because they're inventive and interesting, but the fun when it comes to powerscaling and other shit is watching other fanbases get upset every time he does something
