You remove Drake and Apoo will still try to block with the tonfa and still get cut through.
Hence even though Apoo was fighting Drake when Zoro attacked, removing Drake would hardly change the outcome as Apoo can neither dodge nor block that attack from an enraged Zoro.

Not sure why you assume that Apoo can't defend himself against Zoro when he already did that. Drake was clearly stopping him from using his devil fruit, and then Zoro came in and cut him down. That's all there is to it.

It doesn't matter. Fact is, Apoo was distracted by Drake and couldn't properly prepare for Zoro's attack. We don't know what his devil fruit can really do, it might even have some defensive options. That's how Oda drew that fight. 2 vs. 1.
