He get's the Soba stand plot line and him meeting Toko the way Zoro met her adoptive father so that they are the two SH's who have stakes in protecting her from Orochi after Yasuie's execution
He builds up fame as an outlaw by fighting Denjiro's men and then the Flying Six, so that he and Zoro are immediately recognized as the leaders of the group that Rebels against Orochi when they save Toko
and then he and Zoro get to fight X Drake and Denjiro.
He saves Nami, Robin and Shinobu from Hawkins and X Drake.
He saves Momonosuke who was the main target of the Beast Pirates in Onigashima, which makes the current events of older Momo flying with Luffy and fighting with him possible.
He protects Zoro and get's him to Chopper which makes it possible for Zoro to come back in action.
He saves Chopper and the Samurai on the Live Stage and inspires to keep on fighting, which makes possible Zoro's recovery, as well as the tides not turning against them when everyone was losing morale when they thought Momo and Luffy died.
He saves Tama from Queen's laser which allows her to give the order to the Gifters and turn the tides of the battles where they were assisting the Beast Pirates.
And obviously, the Wings, the Stars, recognition both from crewmates like Robin and characters like Marco, and him and Zoro defeating Kaido's top two men and getting Luffy in reach of becoming the King of the Pirates.

Sanji left that plotline, to share his other Live Performance plotline with Zori. Its not like he was still in it and then got cucked in importance by Chopper.

What has that got to do with anything ? Luffy and Zori got beaten up by Bellamy pirates before the BB. Is that not combat. So desperate to downplay Sanji being there. Oda couldve easily written Sanji out and put Nami there….but he didnt.

It was there both to build towards his eventual fight with Queen, since Queen sent the F6 after him, as well as to build him up as an outlaw by opposing Denjiro's men, as well as to have him meet Toko and build a bond with her, the way Zoro did with Yasuie, so that both he and Zoro have more of a reason than anyone else to jump in and save her from Orochi after Yasuie's death.
If you think the moment with the Bellamy Pirates and BB is about fighting and not a pure character moment about "believing in and chasing one's dreams" then I don't think we have anything more discuss about this.
Yeah something which is the main focus and theme of the arc, and something which led to Jinbe's flashback, Fisher Tiger, Celestial Dragons and Otohime's stories. But that isn't a character moment nor a plot moment. Cools.
