Don't really see title ting tbh if anything Shepard Ju-Peter being Agriculture has a more obvious connection to Sanji's dream & character as it is food related.
Also there's no guarantee Sanji fights Mars simply bcoz he's a bird. Assuming, Sanji fights Laffite who most likely has a flight fruit he doesn't really need to fight another flight type opponent for his final matchup. Good example of this was King on Wano.
That said, if Mars does end up being a "Garuda" specifically tho, then yes it does increase his chances of fighting Sanji ^^

And the bird thing is more because the Garuda is one of the few bird gods mentioned in one piece which shares connection to Germa kingdom.
