I believe sanji can tank more damage than zoro atm. EoS i think the best matchup are luffy v akainu, zoro v fujitora, sanji v kizaru, and jimbe v brocolli man. But i think this matchup will be ruined by gorosei.

A truly complete fighter. A being even Big Mom as the natural born destroyer, fleet Admiral in terms of rank and "the strongest shield the celestials could hope for", called a thing and anomaly. Hence the Gorosei were frightened to taint his reputation as the 1 on 1 king by interfering with his fight, while telling Akainu to shut up. The Gorosei held Kaido's reputation as a fighter in higher regard than Akainu's reputation as the leader of the Marines.
