Theres a very clear reason why thats not happening, and thats because of Akainu. When Luffy fights Akainu, then youll get your 2 Admiral fights for Zoro and Sanji.

I doubt that outside of a skirmish like with Kaido, Sanji will be told by Luffy to clear a path with the others and itll be a 1v1 again.

No idea what is happening with Saturn, but if he also ends up fighting for real seriously, then its probably also with Luffy and/or the Robot.
